Emulation Station seems to use MAME for Sega Model 2 and a standalone emulator called “Supermodel” for Sega Model 3. Emudeck doesn’t download the Supermodel emulator I don’t think so you’d have to download that yourself, put it in the Applications folder, and it should work (if it doesn’t need bios files or whatever).

Emudeck and Sega CD games. I have the Sega CD bios in the bios folder and I have a .7z file of Snatcher in the Sega CD folder. Emudeck recognizes it and when I try to play it the screen turns black and goes back to steam deck main menu. I also tried unpacking it, it's in the tracks format, that also didn't work.
