For my shadowing box I literally just listed the names and numbers of all the doctors I shadowed. IMO shadowing should not be your most meaningful activity, you literally just followed someone who was doing their job. Really depends on how much time you have, and what the requirements are to the schools your applying. Personally, I put in time with 3 doctors. I did 2 of them for 4 eight hour shifts each, so a total of 64 hours. The third doc liked me, so I put in 4 hours a week for 8 months, a total of around 300 hours.
