Decimate in Zbrush then retopo and unwrap in 3D Coat. Subdivide low poly in Zbrush and project high poly onto retopo mesh. Final fine details (pores etc) Export highest and lowest versions. Append a plane3d to your main subtool. Line it up to the bottom of the area where you want it to be flat. Keep it a separate subtool for now. Now under zplugin you'll find Intersection Masker plugin. Click that and you'll get a mask where the two subtools meet. Ok, under polygroups menu make a polygroup out of that mask.
